Friday's Fixin's....

I made this side dish to go along with the ham on Easter Sunday for a family get together....

Honey Roasted Sweet Potatoes

2 pounds (or so) of sweet potatoes
2 tablespoons olive oil
3tablespoons honey (may want to add just a bit more honey)
3 teaspoon fresh lemon juice
Salt to taste .... even pepper if you like
Preheat oven to 350 degrees F.
Peel and cut the sweet potatoes into slices looking like thick chips. In a small bowl whisk together olive oil, honey and lemon juice. Pour mixture over potatoes and toss to coat. Arrange the slices in a baking dish and sprinkle with the salt, and bake, stirring occasionally, for about 1 hour, until potatoes are tender.

This has such a nice flavor!

Oh this sounds so good. Thanks for posting. I make sweet potato chips but haven't in a long time. Now I am hungry for sweet potatoes..LOL
