Friday's Fixin's ~ Caramel Cookies

Caramel Cookies



1/2 cup butter, melted
1 cup packed brown sugar
1 tsp salt
2 cups rolled oats

Melt butter in a sauce pan over low heat. Remove from heat and mix with brown sugar and salt. Mix in oats.
Press onto a greased or parchment paper lined 9 x 13 inch cookie sheet. Bake at 400 degrees until melted together and lightly brown, about 8 minutes. Watch carefully and don't let them overcook! Cut while hot.

These are also great with chocolate chips.

I have to bring cookies to a meeting in the morning, but I ran out of cocoa for my favorite quick oatmeal drop cookie.

This sounds just as easy, with ingredients I have on hand.
